{"id":865,"date":"2016-05-26T14:39:19","date_gmt":"2016-05-26T13:39:19","guid":{"rendered":"http:\/\/grapevinelifestyle.com\/?p=865"},"modified":"2024-10-08T09:26:23","modified_gmt":"2024-10-08T07:26:23","slug":"confused-about-manchego","status":"publish","type":"post","link":"https:\/\/www.grapevine-properties.com\/lifestyle\/2016\/05\/26\/confused-about-manchego\/","title":{"rendered":"Confused about Manchego?"},"content":{"rendered":"<p style=\"text-align:justify;\"><strong>Are you confused about Queso Manchego?<\/strong><\/p>\n<p style=\"text-align:justify;\"><em>You&#8217;re not alone.<\/em><\/p>\n<p style=\"text-align:justify;\">Similar to Jam\u00f3n, Manchego cheese is one of those daunting products where we\u2019re never quite sure what we\u2019re purchasing.<\/p>\n<p style=\"text-align:justify;\">Probably the most popular and widely sold cheese in Spain, <em>Manchego<\/em> originates from the La Mancha region and is made from sheep\u2019s milk. The type of cheese will indicate whether the milk is pasteurized or not. For example a farmhouse<em> Manchego<\/em> is only made from unpasteurized milk whereas the industrial version is made from pasteurized milk. The traditional use of grass moulds leaves a distinctive, characteristic zigzag pattern on the <em>Manchego<\/em> cheese. Like <em>jam\u00f3n<\/em>, the varieties of Manchego are defined by their curing time.<\/p>\n<p style=\"text-align:justify;\"><strong>There are four main types:<\/strong><\/p>\n<p style=\"text-align:justify;\"><strong>Queso Fresco&nbsp;<\/strong><\/p>\n<p style=\"text-align:justify;\">A<em> queso fresco<\/em> is the youngest of the four varieties, aged for just two weeks. Its flavor is mild and, as it\u2019s name would suggest, fresh. This particular type of cheese works great in salads.<\/p>\n<p style=\"text-align:justify;\"><strong>Semi Curado <\/strong><\/p>\n<p style=\"text-align:justify;\">This type of M<em>anchego<\/em> is aged for around three months, it\u2019s semi-firm and has a creamy yet slightly tangy taste.<\/p>\n<p style=\"text-align:justify;\"><strong>Curado <\/strong><\/p>\n<p style=\"text-align:justify;\">Aged for six months, M<em>anchego<\/em> curado has a stronger, sweeter and nuttier flavor then it\u2019s younger versions. Both the curado and semi-curado are great for grating and melting!<\/p>\n<p style=\"text-align:justify;\"><strong>Queso Viejo<\/strong><\/p>\n<p style=\"text-align:justify;\">As it\u2019s name may suggest, q<em>ueso viejo<\/em> (old cheese) is the variety that is cured for the longest time.
